Tonight we turned our @farmerspickau box into a wholesome Mexican feast — using green capsicum, onions, and some ugly delicious Ugly Duck salsa 🌮✨
We made a quick Mexican-style minced beef filling and even whipped up homemade tortillas (so easy, I promise!). These boxes are proof that you don’t need perfect-looking produce to make perfectly tasty meals 💚
🌮 Simple Mexican Beef Filling Recipe
Ingredients: 500g beef mince 1 tbsp olive oil 1 large onion, diced 1 green capsicum, diced 2 tsp ground cumin 1 tsp smoked paprika Salt and pepper, to taste 1/2 cup Ugly Duck salsa (or more to taste) Optional: 1 tbsp tomato paste (for richness)
Instructions: Heat olive oil in a large frying pan over medium heat. Add onion and capsicum and sauté until soft (about 5–7 minutes). Add the beef mince and cook, breaking it up with a spoon, until browned. Stir in cumin, paprika, salt, pepper, and tomato paste (if using). Cook for 2–3 minutes. Add the Ugly Duck salsa and stir through. Simmer for another 3–5 minutes until everything is coated and heated through. Serve in homemade tortillas with your fave toppings — think shredded cheese, avocado, lettuce or more salsa on top!
