This dish is inspired by David Chang’s Netflix series “Ugly Delicious,” where he travels around the world to find delicious foods in all sorts of settings ranging from street food to the fanciest restaurants.
In Indonesia, we have a dish called “Nasi Bakar,” which roughly trasnlates to “Grilled Rice.” Many Indonesian foods are wrapped in banana leaf to provide more flavor or to preserve the food. The combination of the aroma from the baked banana leaf with Latin America’s famous chimichurri sauce works like magic.
RECIPE
FOR THE COCONUT RICE:
2 cups Jasmine Rice
3 cups cocnut milk
2 tsp salt
2 Indonesian Bay Leaves aka Daun Salam
1/2 inch galangal
1 pandan leaf
4 pieces of 6-8 oz Salmon filets
CHIMICHURRI SAUCE
1 cup chopped cilantro
5 cloves garlic
2 dried chilies, or as desired
1/2 tsp cumin powder
1 tbsp dried oregano
1/4 tsp black pepper
1/2 tsp red wine vinegar or lemon juice
1 1/2 tsp salt
1/2 cup olive oil
1/2 cup canolla oil
